

This project belongs to the field of food science. my country is the world's largest tea producer, with an annual tea output of about 2.8 million tons. The tea industry has become an important industry to promote targeted poverty alleviation and rural revitalization in mountainous areas. However, deeply processed tea only accounts for about 10%, and more than 30% of low-grade teas are seriously unsalable. In addition, most summer and autumn teas are not utilized. Backward tea deep processing technology, few high-value products, low comprehensive utilization rate, and backward equipment have become bottlenecks restricting industrial development. This project focuses on technical problems such as efficient manufacturing of tea functional ingredients, creation of selenium-rich tea active factors and new tea products, and development of supporting equipment. After 14 years of joint research, major breakthroughs have been achieved in key technologies, new products and core equipment. The innovative results are as follows: 1. Inventing new technologies for efficient and green manufacturing of tea functional ingredients and instant tea: developing green and environmentally friendly extraction and separation technology for high-purity tea polyphenols and catechins, with a product purity of more than 98%; inventing tea protein biological dissociation and precipitation technology, which reduces costs by more than 40%; Innovating theanine membrane filtration, chromatography and crystallization combination technology, with a recovery rate of more than 80%, realizing the comprehensive utilization of tea resources; Invented new manufacturing technologies such as alkali addition, oxygen addition and acid addition, fresh leaf expansion and enzymatic hydrolysis, ozone degradation and extraction, solved problems such as clarity, solubility, and pesticide residues, and developed high-quality instant tea. 2. Create new selenium-rich tea active factors and high-quality tea products: Develop new selenium-rich tea active factors: selenium-rich tea protein was identified by LC-ICP-MS to contain selenocysteine and selenomethionine; antioxidant peptides contain two polypeptide sequences LPMFG and YPQSFIR, with a DPPH free radical scavenging rate of 95%;ACE inhibitory peptides contain two polypeptide sequences AETGEIKGHY and LGVPIVMHDY, with an ACE inhibition rate of 94.78%; Tea products such as flavored tea concentrates and tea polyphenols functional foods have been created and industrially applied, increasing the added value of tea products. 3. Develop supporting equipment and production lines for new technologies for co-production and efficient comprehensive utilization of tea resources: Invented devices such as intelligent online monitoring of oxidation, high-pressure spray oxidation, dissolved oxygen increase and bulk density measurement that are compatible with the new technologies for co-production and efficient comprehensive utilization; Developed core equipment such as physical field circulation extraction, membrane filtration, pressure filtration and deep dehydration, and built a comprehensive extraction production line for tea functional ingredients with an annual output of 2000 tons and a clean production line for full utilization of tea waste. Supported by projects such as the National Science and Technology Support Plan, this project has obtained 42 nationally authorized invention patents, covering the core patent groups of functional ingredient extraction, product creation, and equipment design; 107 papers have been published, including 52 SCI papers; 9 national/industry standards have been formulated and revised; 6 tea health food certificates have been approved; this project has cultivated 6 national and provincial and ministerial talents such as the chief tea scientist of the national key R & D plan. China Light Industry Federation (Academician Pang Guofang's Expert Group) evaluated this project: the overall technology has reached the international leading level. The project results have been successively awarded in Damin Food (Zhangzhou) Co., Ltd.(the world's largest instant tea producer), Chengdu Huagao Biological Products Co., Ltd.(one of the world's largest tea polyphenols suppliers), Zunyi Lusheng Kangyuan Technology Development Co., Ltd.(the largest tea health food producer in China) and other application demonstrations, a total of 400,000 tons of low-grade tea have been processed in the past three years. The project completed unit has added 2.49 billion yuan in new sales and 300 million yuan in new profits, driving the income of more than 200,000 tea farmers in my country's tea producing areas to increase and become rich. The project is in line with the national industrial policy and the development concept of green, low-carbon, and environmentally friendly, effectively improving the technological progress and market competitiveness of my country's tea industry, and at the same time promoting key technological innovations for the high-value transformation of tea resources, implementing the 2017 Central Committee No. 1 Document on ldquo; making tea advantageous and characteristic industries bigger and stronger rdquo; instructions.
